New potatoes are small, immature potatoes harvested in the spring or summer. They aren't a seperate kind, just picked very young. The skin is thinner and the pulp is flakier than older potatoes. They come in all colors and varieties.
Traditional New Potatoes are round. The oblong shaped young potatoes are called Fingerlings. New potatoes are traditionally served whole or cut in half, boiled, roasted, or steamed, and seasoned with herbs. They usually accompany hearty meat dinners.
